Part 16: Family Time

I haven’t posted much lately – nothing here, and far less on social media than I usually do – but, then again, I haven’t done much, either. I basically realized that, on my social security income, I cannot afford the full-time RV travelling life. I have help from friends and family, but the road isn’t cheap. I decided that the holiday season would be the perfect time to shack up with the family who always says they miss me.

I finally got my bone scan done in San Diego in mid-October, after spending a couple of weeks at my brother’s house in Ventura; getting to know the family a little better and spending time with Janis. I hit the road right away, spending only one night at my Dad’s in San Bernardino, and heading north to Las Vegas, then east to the Four Corners and south again to my sister’s in Houston.

It was a fairly uneventful trip east, because I didn’t have the money to stay at a fancy Harvest Host or campground, plus I was in areas that didn’t have much. I say “fairly,” because the morning that I was almost at my sister’s, my refrigerator stopped working.

I thought I could make it to Houston, but it was close – I literally had just texted my sister, telling her I was ten minutes away – the engine died literally as I was pulling off of the freeway. It was brutal; I was in a three-lane exit ramp during rush hour, and it was a really, really bad time to discover that my hazard lights also didn’t work. My sister’s boyfriend was perched on the rear bumper for a good 45 minutes, directing traffic away from Dolly, until we were able to punch the gas and get to a parking lot nearby.

I finally got Dolly towed to my sister’s house, not even a few miles away, and tried to find a good mechanic. Between the confusion about how to get it fixed – RV techs won’t look at the engine, and mechanics won’t work on a RV right off the bat – that was way more of an ordeal than I anticipated. It took weeks to find a tech to come look at it, and then afterwards, my fridge still didn’t cool anything even though the motor was now running. My lights worked, and my engine started, but I had no idea why it broke down again, seemingly for the same reasons.

My stepdad has been saying since Dolly started doing this same thing while breaking down that it was the ignition coil. I was able to get one and get a local mobile mechanic in Houston to install it, and by that time I had been in Houston for nearly a month.

Of course, I made the best out of being “stuck” in a great city like Houston.

My sister has lived in Houston for a few years now, in a super cute neighborhood near their Produce District. Every year the neighborhood association puts on a Dia de Los Muertos festival in their local park, and my sister is a huge part of the planning and organization. This year, for once, I got to be there to experience it.

It was pretty spectacular. The costumes and decorations were brilliant, and the food was amazing. I had churros and tacos and beer and I watched beautiful dancing and met all of my sister’s neighbors and friends.

My sister and her boyfriend have undergone a total diet and lifestyle transformation this year, cutting out all alcohol, most sugar (except for natural sugars in berries and whatnot), most fats (except for the healthiest avocados, etc.), and most carbs but the most complex and healthy. I’m so proud of them for the transformations they have made. Most of our meals consisted of lean meats, roasted or low-oil-sauteed veggies, an ancient grain or two, and very little, if any, sugar.

This was our Thanksgiving dinner: lean turkey breast, a root vegetable mash, roasted acorn squash with an ancient grain stuffing, a tabouli-type salad with fresh herbs, low-fat feta, pomegranate seeds and more. The red stuff is a faked-out cranberry sauce I made with hibiscus and apple. Everything was really delicious, and it was fun to try new healthy variations on some favorites.

Of course, I also took advantage of the amazing food scene and ate out a bit as well.

Houston is rightfully known as a great foodie town and is one of the most diverse cities anywhere. In addition to being right next to Mexico and Louisiana (so Mexican and Cajun food is off the hook); there are huge Thai, Vietnamese, and Arab communities, so the ethnic food of every type is great everywhere.

I had some really incredible food, just within walking distance of my sister’s house. There is an amazing Thai street food place, where I had delicious curry, Tom Ka Gai soup, and chicken appetizers, not even a half mile away.

A few blocks in the other direction is a famous Mexican joint, Teotihuacan Cafe.

Down another street, towards the farmers market that is the heart of the Produce District, and on the way to a street corner with a taco shop, a famous Mexican bakery, and a spice store, there is an amazing cheese shop with free samples. I had a blast walking around.

If you’re ever in the neighborhood, Houston Dairymaids is worth a taste.

While I was there, a fan of my Instagram page contacted me about Hugs and Donuts and encouraged me to check it out. I got an amazing boudin kolache and a cherry chocolate shortbread donut. Magnificent.

Of course, it wasn’t all in one neighborhood. I met up with one of my old friends from college, who treated me to a super fancy and decadent dinner at Caracol, an elaborate Mexican restaurant in the fancy tourist part of town. I had some amazing oysters, wood-grilled with cheese, chipotle butter and breadcrumbs, and enjoyed a great evening with an old friend.

As you can see, I had a fabulous time eating my way around town. But just as often, I was chilling at my sister’s house, playing with her sweet kitties (especially the luscious Nerms, below).

I was there for weeks, and while I had many good days, where I felt great walking all around the neighborhood, I think I had just as many low-energy, not-so-good days. It’s been like that for a while, now that I think about it; but I am trying to focus on the good days and enjoy life as much as I can. That’s the whole reason I am on this trip, anyway!

So, after a month, and a new ignition coil, I hit the road for 2-3 days to my mom’s house in east Tennessee. All I wanted was an uneventful and safe trip, and I got it.

The first night was in Louisiana, where breakfast was a boudin ball from a gas station. If you’re not familiar, the best food in most parts of the south is at gas stations. Food desert doesn’t even begin to describe some of these areas.

I stopped the next night in Mississippi, then in Alabama (both at truck stops just to make it easier and cheaper), then I was, miraculously, without incident, at my mom’s house in the Smokies. I hadn’t realized how anxious I was about the engine dying, or something crazy happening, until I finally got out of the RV and hugged my mom, and realized I was really, really there.

Not long after I got here, there were major tornadoes and thunderstorms across Tennessee and Kentucky, but luckily they were far from us. We got a few menacing-looking clouds, but nothing too serious.

I have spent most of my time relaxing, cooking, and doing artwork.

I used to do oil painting as a kid and it was a lot of fun. I know my mom was disappointed that I kind of stopped doing art as an adult (except for cooking and some needlework stuff), but really I think it was because my apartment was too small to do a lot of projects.

Regardless, I got the chance to make up for lost time, doing some paint-by-number coloring and painting projects, as well as painting a big empty wall in the basement.

During the drive to my sister’s, headed east through Arizona and New Mexico, I started to feel tiny pains in my left wrist. By the time I had been at in Houston for a couple of weeks, I had a lump on my wristbone that was freaking me out, so I started wearing a wrist brace to prevent any potential damage. I called my doctor, who basically said he couldn’t do anything until I came back.

After a couple of weeks in Tennessee, I ran out of CBDs at the same time that I weaned myself off of Baclofen, a back-spasm-reducing drug that I had been taking for way longer than the recommended time due to my back pain. It was bad timing, for sure. I was in so much pain that I was ready to cut short my time in Tennessee and go back to San Diego right away.

Luckily, I got a hookup on some good CBD capsules, and within days my pain was much better and more manageable. My mom briefly planned to come back with me, but she has her own health issues to take care of, so she will hopefully get to join me in California sooner rather than later.

We had a really lovely, but small, New Year’s celebration, complete with a huge party cheese plate and spread …

and, of course, some black-eyed peas with greens and cornbread for good luck on New Year’s day.

As I sit here now, finishing this post, I am planning to leave tomorrow from my mom’s house, head straight south through Alabama to Interstate 10, then straight west, as far south as I can be, until we get back to San Diego. Of course, I will stop to see my sister in Houston again on my way. I have an appointment with Dr. Vlad on January 21 already, so if I am back earlier, I will try to see him to check out my wrist.

It’s been a wonderful and relaxing couple of months with family, but the weather out here is too cold.

I can’t wait to get back to the beach!

Instant Pot Love – How to make yogurt, cheesecake, meatloaf and more

Do you have an Instant Pot yet?

It was apparently the hottest gift for the 2017 holiday season, so if you’re like me, someone who loves you bought you one of these babies.

It’s really an amazing machine.

It’s a pressure cooker – but not one of those old and clunky ones that your grandmother used to have that made horrible noises and looked like it might explode at any moment.

This is a computerized cooking machine that is smart enough to remember your past settings and cook everything from hardboiled eggs to cheesecake to BBQ ribs.

After using this machine for a few weeks, I was able to happily donate my old slow cooker (because the IP has a slow cooker setting that doesn’t involve pressurization), my rice cooker (it makes all rice, quinoa, oatmeal, and any other type of grains in half the time of the best rice cooker on the market), and my yogurt maker.

Yogurt

Speaking of yogurt, you can literally make a ton of it at the touch of a button. I recommend setting it up before you go to bed at night, and you’ll wake up to yogurt!

All it requires is:

  • a gallon of milk,
  • a small container of plain yogurt (approx. 6 oz.), and
  • a 5 oz. can of sweetened condensed milk.

Put it on the “Yogurt” setting for 10 hours (or more) and then refrigerate.

That’s it.

Adapting Your Favorites to the IP

My first experiment with this machine was for a tagine recipe … one of my favorite Moroccan dishes with chicken, chicken livers, green olives, preserved lemons, and other veggies.

Instead of slow cooking this for 8-9 hours, or on the stovetop in a fancy tagine clay pot, I simply placed all the ingredients in the Instant Pot and pressure-cooked it for 25 minutes.

I have to admit, I was still a little nervous. Would that be enough time to cook chicken? And to make sure all of the flavors were properly cooked in to the meat?

I think the most important thing when adapting is to check the pressure release – a “quick release” of the pressure will let the steam escape right away and are for recipes that are not generally slow-cooked (see, for example, the meatloaf and mashed potatoes recipe, below).

For a recipe like this chicken where you want the flavors to be infused into every bite, you will want to do a “natural release” method after the cooking time is over. It takes a few extra minutes, but it’s worth it. And it’s still ready to eat in a fraction of the time.

Sweet Dishes

One of the first rookie mistakes of the Instant Pot is to neglect the sealing ring. The IP comes with a clear ring that fits on the inside of the pressurized lid.

At the very least, you need to make sure the sealing ring is cleaned after every use, or the flavors from whatever you cook will stick to the ring and get into everything you cook later.

If you intend to use your Instant Pot for savory dishes (chicken, ribs, eggs) as well as sweet dishes (cheesecakes and desserts), then the first thing you need to do is buy at least one extra sealing ring. I got a pair of them on Amazon.

Now I only use the red sealing ring for desserts and sweet dishes.

I also purchased a springform pan that fits inside a 6-quart Instant Pot, and I can use this for cheesecakes and other desserts as well as lasagna.

I made a couple of different types of cheesecake to see how well it worked. Basically, you can make the crust however you like (crushed cookies with melted butter, or even a brownie that is only partially baked in the oven).

Then the filling recipe is simple:

  • 4 8-oz. packages of cream cheese
  • 4 large eggs
  • 1 1/2 cups sugar

The most important thing to remember is that the cream cheese and eggs MUST be at room temperature. If not, they will not blend properly and will result in a lumpy cheesecake. Make sure all ingredients are blended and smooth, then pour into your springform pan.

Cook on the (high) pressure setting for 45 minutes, and use the natural release method (which will take about another 10-15 minutes).

Let it cool and garnish with your favorite toppings.

This is one of my favorite recipes because it’s so easily adaptable. Try it with lots of different crusts and/or toppings!

I have tried similar recipes in the oven before, and I even made some in the oven while I was making some in the Instant Pot, just so I could see the difference in flavor and texture. The pressure cooking makes the filling much softer and lighter!

Food parties

During my first couple of weeks with the Instant Pot, I organized a few friends for a tamale party.

If you’ve never been to one, it’s basically a fun way to make a party out of something that can be pretty boring and tedious – making tamales.

Tamales are a popular dish around the holiday season, especially in the southwestern United States and Mexico. They are delicious concoctions of many types of fillings and masa (corn) dough stuffed into corn husks and steamed.

They are also a giant pain to make. Hence, a party.

Instead of spending hours doing all the work yourself, you get a few friends, everyone brings fillings and masa dough and corn husks (as well as a few bottles of wine and snacks to sustain you for a long afternoon), and everyone makes a bunch of tamales.

It’s a little bit of work, but everyone goes home with tons of tamales to eat (or freeze for later).

As you can imagine, the Instant Pot made a ton of work a little easier.

The night before the party, I used my Instant Pot to make a vegetarian filling … literally a variety of vegetables and spices simmered for a few hours. Except that it literally took less than 20 minutes on the pressure setting. It took me longer to chop all of the veggies than it did for me to make a huge amount of delicious vegetarian filling.

I also made a chicken verde filling – literally a few boneless chicken thighs and a big can of salsa verde – that was ready in half an hour.

And, of course, tamales need to be cooked, too; and that usually takes 1 1/2 to 2 hours in standard steamer pot. But I actually brought my Instant Pot with me to the party (did I mention it’s very portable and has a handy handle on top?) and was able to steam a few batches right on the spot.

A full pot (I have a 6-quart) stuffed full of tamales steamed each one beautifully in 30-35 minutes. (Do a quick release afterwards.)

Weeknight Meals

Because the Instant Pot can make short work out of many dishes that would otherwise take hours and hours, it’s perfect for weeknight meals and holiday dinners.

For Christmas dinner I used it to make Brussels sprouts (in 3 minutes!); and for New Year’s, I made black-eyed peas and greens, a delicious Southern New Year’s Day tradition to bring good luck in the new year.

Usually it simmers in my slow cooker for 24 hours. This year, I made it in 35 minutes – from dried beans!

Which brings me to another awesome feature of the Instant Pot – it’s multi-functionality! Although most recipes use the “pressure” setting, there is also an equally awesome “sauté” setting.

For example, before, when I made black-eyed peas in my crock pot, I would brown the onions and garlic and whatnot before adding them to the slow cooker.

With the Instant Pot, you can sauté the veggies, then add the rest of your ingredients and switch the setting to pressure to complete the dish! It saves tons of time in washing multiple pots and pans, not to mention that you are cooking the food in a fraction of the time.

Meatloaf and Mashed Potatoes

The meatloaf and mashed potatoes recipe from I Wash, You Dry is definitely going to be a weeknight supper regular for me. It’s so easy!

You place the potatoes and chicken broth at the bottom, then put the wire rack over the potatoes and place the foil-wrapped meatloaf on top. You can even cook a vegetable side dish in there, too.

With only 25 minutes on pressure, and quick release, you can have a delicious dinner on the table in no time.

Sous Vide Eggs and Meal Planning

I usually eat breakfast on the go, and it’s hard to do that and stay healthy sometimes. Luckily, the Instant Pot is also great  for meal prep.

This is another cool Instant Pot accessory … a silicone mold. The Amazon listing says it’s for baby food and egg bites, among other things, but I use it mostly for eggs.

The most important thing to remember here is to not fill the cups all the way. I made that mistake my first time, and the egg mixture expanded and almost popped out of the container!

Ah well. They still tasted good!

This is a really great way to prepare an easy and healthy breakfast.

You can customize the flavorings (and control the salt and fat, etc.), and make a whole pan of these in less than half an hour – 8 minutes of pressure cooking (which means it will take a moment to get to the appropriate pressure) and then 10 minutes to let the steam naturally release.

The result is a pan of delicious and super-fluffy egg bites you can eat all week long.

How to make your own ham – plus a bonus recipe

It just keep getting better. Last year I made my own bacon (cured and smoked pork belly) and fabulous homemade pastrami (a corned beef brisket coated in spices and smoked). Most recently, and using similar process, I made ham as well.

It’s pretty easy to locate an uncured ham bone in most grocery stores, or your butcher should be able to hook you up with one. A pork shoulder cut would also work.

The idea is that you let the bone-in pork leg cure in a wet brine for about a day for every two pounds, then you let it sit uncovered in your fridge for another day or so, and then you smoke it until it’s reached 160 internal temperature.

There was some disagreement in the various recipes I read about the part in between the wet brining and the uncovered setting; some recipes said to let the hams soak overnight in water to get out the excess salt, and others said just to give it a good rinse. Since I had two hams, I did both. The ham that soaked overnight in water was obviously less salty, so I coated it in apple butter halfway through the smoking process. In the end, I had a sweeter ham and a saltier ham, but both of them were very tasty and made a few excellent meals.

Recipe for the wet brine:

  • 2 liters water
  • 3/4 cup kosher salt
  • 1 cup turbinado sugar
  • 1/4 cup molasses
  • 3 tsp. pink curing salt
  • whole cloves (optional)

Measure how much liquid brine you will need by first placing the hams in your plastic container to judge the volume. I had to double the recipe, but I used two small hams (about 4 lbs. each). As you can see, I also needed a pretty big plastic container to hold both hams. Make sure you get one with a lid and make sure it can fit in your fridge (I had to measure the interior of my refrigerator just to make sure).

The ham(s) sit in the brine (covered) for about a day for every two pounds of meat. Then I let one ham soak in water, and then both of them sat uncovered for a day. This lets a pellicle form over the meat, which is an invisible, sticky film that seems to act as a glue for the tasty smoke.

I also coated the sweeter ham (the one that sat in water overnight) with my homemade spiced apple butter. It added a perfectly spiced and apple-y flavor without too much sweetness.

The hams need to smoke at about 300 degrees or less until they reach an internal temperature of 160 degrees. It should take about 6 hours.

This year I threw a party on Christmas Eve; I planned out ahead of time how long the process would take so I could smoke the hams on Christmas Eve and we could all eat them for dinner. I have to say that despite the weather being unexpectedly cold and rainy (I live in San Diego so it really was a surprise to have weather in December), thus keeping my smoker’s temperature down and leading to a delayed dinner, the hams were a great success.

Both of the hams were delicious for dinner, then the next few days’ breakfast (ham and eggs, a nice hammy omelette) and lunch (ham and cheese sandwiches), and a few days later, when little remained but the smoked ham bones, the bones were tossed in the crock pot with carrots, onions, peppers, spices and black-eyed peas that had been soaking overnight, and it made an insanely wonderful black-eyed peas dish for New Year’s Day.

Bonus Recipe: Black-Eyed Peas

  • 1 ham bone, stripped of most of the meat
  • 1 1-lb. bag of black-eyed peas, rinsed and soaked in water for at least 12 hours
  • 1 large red onion, chopped
  • 10-12 pearl onions
  • 1 head of garlic, diced
  • 3-4 large carrots, peeled and chopped
  • 2-3 dried chilis
  • 2 tbsp. each salt, black pepper, paprika and cumin
  • 1 quart vegetable or chicken stock
  • fresh spinach leaves, for serving

After soaking, draining and rinsing the black-eyed peas (soak them at least 12 hours), place them in the crock pot with all of the other ingredients except the spinach. Simmer on low heat for 16 hours or more. Check periodically and add more liquid if necessary. Serve with fresh spinach leaves (which will wilt when the hot beans are added).
